We’ve chosen the very best of British producers and artisan suppliers for Charlie’s Café. We don’t compromise on quality and we believe you’ll notice the difference in taste!

We started by asking Lyndon Gee, a leading food influencer with 20 years in the food world, to help us choose. Lyndon was Chairman of the Selection Panel for the Real Food Festival (the world’s largest Farmer’s Market) so he knows a good producer when he sees one! Lyndon is also Chairman of Slow Food Westminster and a food writer and columnist.

So, with all the top quality British produce we buy, Lyndon has devised the yummy recipes for our Chef Rafael and his team to cook. Not only do you get brilliant ingredients but healthy, great tasting natural food too!

And, watch out for our Guest Farmers who will supply us with seasonal specialities from time to time. These suppliers are often so small they can’t supply us every day, but we will have wonderful tasters of things as and when they’re available.

Passionate Producers:
 
Sillfield Farm
Peter Gott is well known for wearing britches and long red socks! But he’s equally well known for the quality of the pork and wild boar he produces.

All our sausages, bacon and ham come from Peter’s Sillfield Farm in Cumbria, in the heart of Westmorland County, the Lake District, reared on 80 acres of grass and woodland. Pork is still produced here in the traditional way so that it matures slowly. Sillfield has rare breed pigs, wild boars, rare breed sheep and chickens. All of which are free-range and homegrown. Jamie Oliver is a great fan of Peter, and all his students from ‘Fifteen’ spend a day on the farm learning about pig farming and producing sausages & bacon. Peter uses no artificial flavourings or colourings and we think you will notice the difference.

  • Cumberland sausage – Made on the farm to a traditional Cumbrian recipe with natural casings, Peter is currently applying to the EU to give these sausages protected origin status.
  • Rare breed chipolatas – With 85-90% meat content bred used include saddleback, middle white, Tamworth and Gloucester old spot.
  • Wild Boar with Chianti & shallots – The boar are free to roam in woodland in the Lake District.
  • Roast Cumberland ham – This succulent lean ham is full of flavour and unlike many commercial hams it is not pumped with water or flavouring.
  • Dry cured Back bacon & streaky bacon – Smoked naturally over oak chips this succulent bacon is dense and packed with flavour. Unlike industrially produced bacon it does not release lots of liquid when cooked.
  • Wild Boar Pancetta – This smoked Italian style bacon adds a wonderfully rich flavour to dishes. We use it to wrap chicken breast in and with pasta dishes.
  • Black Pudding – This black pudding is made in the traditional Lancashire way and baked in a flat oven tray rather than made into a sausage. Peter adds a secret ingredient the herb Pennyroyal. A member of the mint family it has long been used in folk medicine to aid digestion.

Blackmoor Game
Based on Wield Wood Farm, Hampshire. Blackmoor supply all our wild game. A family run business established for over 25 years, they are members of Game Conservancy and The National Game Dealers Association.

Blackmoor hang and mature the game so it reaches us in perfect condition. We think you will enjoy this low fat, nutritious and naturally reared meat.

Our venison and venison sausages are currently made with fallow deer and our pheasant are shot on a range of estates across Hampshire.

Reg Johnson & Bud Swarbrick
Reg Johnson & Bud Swarbrick have been producing poultry in the picturesque village of Goosnargh in Lancashire’s Ribble Valley for over 30 years and Reg’s daughter Kara also works in this small rural business producing chicken, ducks and geese.

The chickens and kept in lower density flocks than your average chicken and these two dedicated farmers mix feed to their own secret recipe, which is free from any additives, growth promoters antibiotics or medication, producing a chicken with a rich firm and succulent meat. Goosnargh Chicken is used in many of London’s top restaurants and when you taste it here at Charlie’s you will understand why.

David & Pam Haighton
David & Pam Haighton have a 47 acre farm in the idyllic Shropshire countryside where theykeep asmall herd of 50 Rare Breed Gloucester Old Spot pigs. Thepigs are reared outside as nature intended and are allowed to root and dig inthe fields, expressing their natural behaviour. Theygrow at their own pace becausethe pigsare not given any antibiotics, growth promoters or GM additives in their feed.

Gloucestershire Old Spotsare known as ‘the orchard pig’ because they were originally putin the cider orchards of Gloucestershire,eating the windfall applesand at the same time fertilising the trees. Probably the best ‘old fashioned’ Rare Breed pork pig in the register of Rare Breeds, the sows are very good mothers, quiet and ideal for the outdoor free range system. David says "The piglets are so free range that we have had them in the house when they think it should be feeding time!" David & Pam make the sausages for usby handon the farmto an old fashioned recipe and we think you will enjoy the results.
 
Fruit & Vegetables
With the world-famous Portobello market on our doorstep we buy all our fresh produce daily from the local stallholders, some of whom are 3rd generation at the market!

We buy British, seasonal produce wherever possible and trust our wonderful stallholders to supply the very best on your behalf!

ChegworthValleyJuices
Our Fruit Juices all come from Chegworth Valley, which is situated in Garden of England – Kent. A family run business growing a wide variety of apples and pears as well as soft fruits. The fruit is ripened on the tree and then pressed within hours of picking which makes for a far tastier juice.

Pressed in small batches, Chegworth Valley Juices are a range of 100% pure apple juices and a selection of aromatic blends using pears, raspberries, strawberries, beetroot, rhubarb, blackcurrants, and blackberries. Full of natural goodness and containing no added sugars, sweeteners, concentrates, artificial colourings, flavourings, or preservatives. All of the apples and pears on the farm are now completely organic and certified by the Soil Association.

Coffee
Our coffee is roasted and blended by a small family firm, using fairly traded coffee. We worked with them to choose a blend that we think makes the best Espresso and Cappuccino available.

We also run regular training sessions to make sure every cup tastes as good as the last. The predominant flavour is Bourbon, a variety of Arabica bean that is noted for its rich and smooth flavour with velvety chocolate finish. Although this old fashioned variety of bean does not produce a high yield, we think it well worth the extra money the growers are paid. We also use organic milk and you can choose soya milk, which is specially for those with a lactose intolerance.

Tea
Tea is important to us so we teamed up with Tea pigs who provide us with wonderful teas which are ethically produced. The unique tea bags we use are packed with the finest top quality leaf tea and not the tea dust used in so many big brand tea bags. The bags known as tea temples because of their pyramid shape are made from silk and leave plenty of room for the leaves to circulate giving you the perfect cup. Some of the profits from tea pigs is donated to an orphanage in Rwanda’s tea growing region where some of our tea is grown.
 
Lighting
Our lighting is from Original BTC who manufacture near Oxford and export around the world. A wonderful collection of timeless lighting designed by Peter Bowles. Ceramics
The plates, bowls and cups are British made of fine bone china in Stoke-on-Trent. We think our fine bone china is so much more pleasant to eat and drink from, the real McCoy. At popular request a selection of branded items are available to buy or ordering is possible. Staffordshire Heritage Fine China Ltd, our supplier, works with many brand names.
